Ingredients
- 1 medium to large fillet of trout or salmon
- 3 tablespoons butter
- 2 tablespoons lemon juice
- 1 tablespoon fresh parsley (or 1 teaspoon dried)
- 1 tablespoon fresh dill (or 1 teaspoon dried)
- 1 garlic clove, grated
- Salt and pepper
Instructions
- Preheat the oven to 180 degrees Celsius (350F).
- Place the Trout fillet (or Salmon) on a baking tray.
- In a glass jug or microwaveable bowl, melt the butter in the microwave.
Add the lemon juice, parsley, dill, garlic, a pinch of salt and a little freshly cracked black pepper to the melted butter. Stir to combine. - Using a fork, poke a few holes along the length of the fillet and then pour the sauce over the fillet. Some of the sauce will run off – you can try and collect the excess sauce and spoon over the fillet again. The little holes you made with the fork will help absorb the sauce.
- Bake for 12-15 minutes or until the fish has cooked through (the fish should be a solid pink and not translucent). Be careful not to overcook.
- Garnish with a slice of lemon and extra parsley. Serve with rice, mashed potato or baked potatoes.
