Creamy One-Pot Alphabet Tomato Pasta (Ready in 15 Minutes)


Description

A deliciously creamy one-pot tomato pasta dish that kids absolutely LOVE! Make it with alphabet-shaped pasta and you have a pasta dish your kids will beg you for! The dish comes together easily in under 15 minutes, using basic pantry staples.


Ingredients

  • 2 tablespoon butter
  • 2 tablespoon olive oil
  • 2 cloves garlic, minced
  • 2 tablespoon tomato paste
  • 1 cup passata
  • 1 cup chicken stock (or beef or veg!)
  • 1/2 cup water
  • 2 cups alphabet pasta (or any small pasta)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried thyme
  • Salt and pepper, to taste
  • ⅓ cup cream (optional)
  • ⅓ cup grated Parmesan


Instructions

  1. Melt the butter and olive oil together in a medium pot over medium heat.
  2. Add the minced garlic and let it cook for a minute until fragrant.
  3. Stir in the tomato paste, herbs, onion powder and garlic powder. Cook for another minute.
  4. Add passata, chicken stock and water. Mix until smooth.
  5. Bring it up to a gentle simmer, then add the pasta. Lower the heat, and let it cook for about 10–12 minutes until the pasta is tender. Give it a stir now and then and add a splash of water if it starts getting too thick.
  6. Stir in the cream and parmesan.
  7. Spoon into bowls and finish with extra Parmesan and fresh basil if you’re feeling fancy.
