Description
A deliciously creamy one-pot tomato pasta dish that kids absolutely LOVE! Make it with alphabet-shaped pasta and you have a pasta dish your kids will beg you for! The dish comes together easily in under 15 minutes, using basic pantry staples.
Ingredients
- 2 tablespoon butter
- 2 tablespoon olive oil
- 2 cloves garlic, minced
- 2 tablespoon tomato paste
- 1 cup passata
- 1 cup chicken stock (or beef or veg!)
- 1/2 cup water
- 2 cups alphabet pasta (or any small pasta)
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp dried thyme
- Salt and pepper, to taste
- ⅓ cup cream (optional)
- ⅓ cup grated Parmesan
Instructions
- Melt the butter and olive oil together in a medium pot over medium heat.
- Add the minced garlic and let it cook for a minute until fragrant.
- Stir in the tomato paste, herbs, onion powder and garlic powder. Cook for another minute.
- Add passata, chicken stock and water. Mix until smooth.
- Bring it up to a gentle simmer, then add the pasta. Lower the heat, and let it cook for about 10–12 minutes until the pasta is tender. Give it a stir now and then and add a splash of water if it starts getting too thick.
- Stir in the cream and parmesan.
- Spoon into bowls and finish with extra Parmesan and fresh basil if you’re feeling fancy.
