Description
Delicious tray bake Chocolate Cake that is decadent and moist. The icing is melt in your mouth and the recipe is quick and easy to make.
Ingredients
Cake
- 2 cups flour
- 1 3/4 cups sugar
- 1/2 cup butter
- 1/4 cup cocoa
- 1/2 cup oil
- 1 cup water
- 1/2 cup yoghurt
- 2 eggs, slightly beaten
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon vanilla essence
Icing:
- 1/2 cup butter
- 2 tablespoons cocoa
- 2 tablespoons yoghurt
- 1 1/2 cups icing sugar
- 1 tablespoon vanilla essence
Instructions
- Add sugar and flour in a bowl
- In a saucepan, bring the butter, cocoa, oil and water to a gentle simmer. Mix well and then remove from heat and place in the bowl with the sugar and flour
- Then add the yoghurt, eggs, baking soda, baking powder and vanilla essence. Mix gently here – don’t beat or overmix. Using an electric mixer, you need only mix until everything is well combined.
- Pour into a greased baking tray or rectangular casserole dish and bake at 180°C for 30-35 mins or until a wooden skewer inserted into the middle of the cake comes out clean
- Once cooked allow to cool before adding the icing.
- To make the icing, bring the butter, cocoa and yoghurt to a gentle simmer, mix well and then remove from heat. Add the icing sugar and vanilla essence and mix until smooth .
- Pour over the cake whilst icing is still hot. (do not reheat the icing as it will likely form crystals and hard bits which won’t taste so great!)
- Decorate and savor each mouthful!
