Easy Homemade Vanilla Ice Cream Recipe (with Ice Cream Maker)

Ingredients

  • 2 1/2 cups heavy cream
  • 1 1/2 cups whole / Full cream milk
  • 2/3 cup castor sugar
  • Pinch of salt
  • Vanilla seeds of 1 vanilla pod OR 2 teaspoons vanilla extract
  • Optional additions: 1 1/2 cups of cookies, brownies or strawberries

Instructions

  1. In a heavy-bottomed pot, add the cream, milk, sugar and salt and place over medium heat. Stir consistently to dissolve the sugar for 4-5 minutes and until the mixture has been warmed right through.
  2. Take off the heat, add the vanilla seeds or extract and stir through.
  3. Place the mixture in the fridge to cool for 2 hours or so (You can chill the mixture overnight as well)
  4. When you are ready to make ice-cream, get the machine ready according to your machines instructions, (remember to pre-chill the removable bowl)
  5. Remove the chilled mixture from the fridge and add to your ice-cream maker and churn for 20-30 minutes until lovely and thick. 
  6. You can serve this softer ice-cream or you place the mixture in a freezer-friendly container and freeze ice-cream for 2-4 hours or longer and eat later for a firmer texture.
