Edamame Salad with Parmesan and Creamy Herb Dressing


Description

Delightfully fresh green salad with Edamame beans, Snap peas, Parmesan and lots of creamy green herb dressing.

 


Ingredients

Salad: 

  • 100g leafy greens (3 cups loosely packed) – baby spinach, rocket and watercress
  • 1 cup shelled Edamame Beans
  • 1 cup green snap peas
  • 75g Parmesan, shaved
  • Cracked Black Pepper

Dressing: 

  • 1 avocado
  • ½ cup plain Greek yoghurt (full cream)
  • ½ cup fresh parsley
  • ¼ cup chives/mint/coriander
  • 1 modest garlic clove
  • ½ cup water
  • 1 tablespoon lemon juice
  • Salt and Freshly cracked black pepper to taste

Instructions

  1. Add the salad greens into a large salad bowl or platter, leave a little parmesan, a few edamame beans and snap peas aside – we will use them as garnishes once we’ve added the dressing.
  2. Place all the dressing ingredients into a food blender and mix until you have a lovely creamy green dressing – a minute or so. Taste and add a little more salt and pepper if needed.
  3. Just before serving, drizzle half the dressing over the salad and place the other half in a bowl in case people want to add more.
  4. Garnish with the parmesan you set aside as well as the edamame beans and snap peas. Crack a little black pepper over as well – it looks pretty. Tadaa! Enjoy.
