Ginger Chicken Stir-Fry {Best Ever!}


Description

The best Chicken Stir-Fry you will ever taste. An amazingly simple recipe bursting with flavour that comes together in under 30 minutes. Your whole family will love this tasty dinner – It is certainly requested over and over again in my house! 


Ingredients

  • 3 tablespoons olive oil
  • 3 tablespoons butter
  • 4 chicken breasts, sliced into strips
  • Freshly cracked black pepper
  • 1 tablespoon Thai red curry paste
  • 3 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 2 bell peppers, sliced
  • 4 spring onions (scallions), chopped
  • 3 cups chopped cabbage
  • 2 carrots, julienned
  • 1 cup cashews (or peanuts)
  • 1 tablespoon honey (or maple syrup)
  • 2/3 cup soy sauce
  • 1/3 cup water
  • ½ cup fresh coriander

Instructions

  1. In a large frying pan, heat the oil and butter over medium heat and then add the chicken. Grind a liberal amount of freshly cracked black pepper over the chicken. Cook until the chicken has browned (2-3 minutes) and then add the Thai red curry paste, garlic and ginger and cook for 1-2 minutes until fragrant. Remove chicken from the pan and set aside.
  2. In the same pan, add in the peppers, spring onions, cabbage, carrots and cashews and cook for 4-5 minutes until the veggies are tender.
  3. Pour over the honey, soy sauce and water and stir to combine. Cook for another 3-4 minutes until the sauce has reduced slightly. Add the chicken back to the pan and toss to coat in the sauce.
  4. Serve the stir-fry over a bed of rice and garnish with fresh coriander
