Ingredients

Chicken:

  • ¼ cup cooking oil
  • 2 eggs, lightly beaten
  • 3 tablespoons cornstarch (cornflour)
  • ½ cup flour
  • 1 teaspoon salt
  • ½ teaspoon cracked black pepper
  • 1 teaspoon garlic powder
  • 2 teaspoons paprika
  • 4 chicken breasts, chopped into cubes

Sauce:

  • 1 tablespoon sesame oil,
  • 2 cloves garlic, minced
  • 1 tablespoon rice vinegar (or white wine vinegar)
  • 1 ½  tablespoons honey
  • 1 ½ tablespoons sweet chilli sauce
  • 3 tablespoons tomato sauce (ketchup)
  • 6 tablespoons soy sauce

Garnish

  • 2 tablespoons toasted sesame seeds
  • 4 spring onions, chopped

Instructions

  1. In a medium-sized bowl, add the cornflour. In another bowl, whisk the eggs. In a third bowl, add the flour, salt, pepper, garlic powder and paprika and mix together. You will now have 3 bowls!
  2. Next step is to coat the chicken pieces in the cornflour, then dip into the egg mixture and then coat with the seasoned flour mixture.
  3. Once the chicken is all coated, heat the oil in a wok or large frying pan over high heat. Once the oil is simmering hot, add the chicken pieces and cook for 5-6 minutes, turning pieces once or twice until browned all over and cooked through. You may need to do this in 2 batches. Remove chicken and set aside.
  4. Add the sauce ingredients to the wok, and allow it to reduce slightly, about 2-3 minutes or so. Now add the chicken back to the wok and heat through, tossing the pieces in the sauce to coat evenly, 1-2 minutes.
  5. Serve over a bed of rice, garnished with a generous serving of sesame seeds (around ½ a tablespoon) and chopped spring onions. Enjoy!
