Description
A classic South African treat, Chocolate Crunchies are easy to make and even easier to eat!
Ingredients
For the crunchies
- 1 cup oats
- ½ cup plain flour
- ½ cup desiccated coconut
- 3 tablespoons cocoa powder
- 140g butter
- 1 tablespoon golden syrup
- ½ cup sugar (I used light brown)
- ½ teaspoon bicarbonate of soda
For the chocolate icing
- 1 cup icing sugar
- 2 tablespoons cocoa powder
- 2 tablespoons butter, melted
- ½ teaspoon vanilla essence
- 2 tablespoons hot water
Instructions
- Preheat the oven to 180°C (356°F). Grease and line a 27 x 20cm baking tin with baking paper.
- Add the oats, flour, coconut and cocoa powder to a large bowl and mix together.
- Place the butter, golden syrup and brown sugar in a small saucepan. Heat gently, stirring until the butter has melted and the mixture is smooth (alternately, heat in the microwave).
- Remove from the heat, stir in the bicarbonate of soda and then pour the warm mixture over the dry ingredients.
- Mix until everything is well combined.
- Transfer to the prepared tin and press the mixture down firmly into an even layer.
- Bake for 18-20 minutes. Allow to cool completely before icing.
- To make the icing, combine the icing sugar and cocoa. Add the melted butter, vanilla and hot water and mix until smooth and spreadable.
- Spread over the cooled crunchies and leave to set before slicing into squares.
- Store in an airtight container.
