Spanish Chorizo is a sausage made from coarsely chopped pork and pork fat, seasoned with salt, garlic, herbs and paprika – the latter giving it a smoky flavour and that rich red colour. There are hundreds of regional varieties in Spain, generally classed as either picante (spicy) or dulce (sweet) – depending on the type of paprika used. Often served in thin slices as a tapa dish, the Spanish Chorizo is popular worldwide and available in most countries today.
