Ingredients
- 210g margarine
- 3 eggs
- 2 cups sugar
- 3 cups flour
- 1 cup milk
- 4 tsp baking powder
- 1 tsp vanilla essence
Instructions
- Beat margarine and sugar till creamed.
- Add eggs one at a time.
- Add flour and milk alternatively.
- Add vanilla.
- Add baking powder.
- Pour into a greased tin.
- Bake at 180-185°C for 45 minutes.

I used this recipe but reduced the sugar a little. The sponge loaf was divine – I think it can actually make 2 loaves depending on the type of pan you are using because mine was overflowing! I’ll definitely be using it again
