The cook time on this recipe is not long enough it has to be at least about a 30 min cook time if you do not want the fudge to come out soft

Help, okay so my fudge looks okay and tastes okay, but is still very soft and when you eat it, you can can feel the sugar granules. How are you supposed to get it hard and should i use castor sugar next time as i followed the recipe to the tea?

You need to keep stirring until the sugar is dissolved. If it’s toffee like then you didn’t cook it long enough. To test it put some of the fudge in a cup of water to cool it down try it. But generally you can tell by the colour of the fudge. It will be quite a bit darker, caramel like when it’s ready.

But even easier is to get a large microwave glass bowl. Melt the butter. Add the condensed milk and sugar. Put the microware on full for 5 mins. Take out stir. Put back in for 5 mins on full. Take out stir. Put back in the microwave for 3 mins on full. Should be ready. Might have to make it shorter of longer depending on your microwave’s power. Mine’s 900W. You need a large bowl as the fudge will boil and if it’s not large enough you will need to watch that it doesn’t boil over. If it starts to, open the door for a few seconds to let it go down then continue.

Believe me this is a lot easier than stirring for 30mins +

When making fudge you need to be extremely careful. never maske fudge over extreme heat rather keep it at medium temp then lower… and also if you leave it 1 minute too long on the heat you may land up with toffee.. as for the sugar granules that is because the stove was too high and started boiling before it even dissolved. Its very easy to make fudge but also you need to be careful and ptient

They also say drop a little bit of the fudge in a cup of cold water and if it goes into a ball and firm then it is done

Mine has turned out perfectly but with two small additions.
    3 teaspoons vanilla essence
Once finished on gge stove i use an electric beater and beat the creamy caramel liquid .
Thisseems to give a smoother more creamy texture and works everytime
