The Peppermint Crisp Tart is an an easy no-bake South African dessert made with layers of biscuits, caramel and cream. It is a much-loved South African dessert that only requires 4 ingredients.
Everyone gets excited to eat this pudding – who can resist, the decadent combination of caramel, cream and spongy Tennis Biscuits, topped with peppermint chocolate? Not me! If you’ve never made it before, you’re in for a treat. And if you have, you’ll know this is one of those desserts that disappears very quickly.

What Ingredients do you need for Peppermint Crisp Tart?
- Peppermint Crisp Chocolate bars – You really only need two but I suggest a third for nibbling on so as to not eat into your actual supplies.
- Caramel Treat – just 1 can
- Orley Whip or Whipping Cream – We need 500ml in total so I just usually buy 2 bottles of Orley whip which seems far more relaible and easier and quicker to whip into stiff peaks than whipping cream.
- Tennis Biscuits – 2 packets although you will have a few leftover
How do you make Peppermint Crisp Tart? The basic process:
- Mix the caramel until smooth (large bowl)
- Beat the Orley Whip / Cream (another large bowl) until soft peaks form.
- Fold Orley Whip / Cream into caramel mixture.
- Layer the Tennis biscuits in a rectangular dish with the Orley Whip (or Cream) mixture.
- Sprinkle peppermint crisp on top.
- Place in fridge to set for 2-3 hours or longer if possible
Can you freeze peppermint crisp tart?
Yes you can freeze peppermint crisp tart and it is a popular method to turn this dessert into a frozen, fudgy, ice cream-like treat. Yummy!!
How long does it last in the fridge?
Up to 3 days, covered but generally it doesn’t last that long, as in, people will scuffle it down it before then.
Can I make it ahead of time?
Absolutely — it’s actually better when made the day before.
How to store peppermint crisp tart
Keep covered in the fridge and serve chilled. Avoid leaving it out for too long as the cream will soften.
How do you Make a smaller version of this tart?
Easy, just reduce the quantities slightly. Use 1 carton of cream or orley whip (250ml) plus half a tin of caramel treat and one pack of tennis biscuits – this will still feed 4 people easily!!! Also, use a smaller dish.

Tips for making THE BEST peppermint crisp tart
- Chill for 5-6 hours if you can — but 2-3 hours is still okay
- Don’t overwhip the cream — keep it soft and airy
- Mix the caramel treat until smooth before adding the cream
- Use a glass dish so you can see the layers (always looks impressive)
- Let it sit for 10 minutes before serving for the perfect texture
Variations to try
- Add a layer of crushed peppermint crisp between layers for extra crunch
- Use chocolate biscuits instead of tennis biscuits
- Add a drizzle of melted chocolate on top for a richer version

I live in Australia and made this for our Master Cook competition at work. They absolutely loved it. So many people have asked for the recipe and they can not believe how easy it is.
very simple and easy. I dont have a sweet tooth so what i do to make it less sweet is, I’ll make lemon jelly, let it set, then add it to the cream/caramel mixture. It makes the recipe light and fluffy as well. Just another way to make it if you dont like the richness of the pudding, but if you do then skip the lemon jelly!

I’m a 20 year old girl who loves to cook, this recipe was just DEVINE! it was very easy to make and it felt like I was making it the hundreth time even though it was my 1st time, however I altered the recipe a bit by making a crushed tennis biscuit nd butter for the base, very rich but delightful thank you!
try adding a bit of peppermint essence, you will be surprised at how nice this makes the pudding

The caramel = caramel condensed milk
It’s caramel in a tin, its definitely not condensed milk as it is much thicker than that.
With a sweet tooth like mine, i won’t even get a chance to put the orley whip mixture into the dish, as i will have eaten it just like that. 😉

i know this is a fantastic pudding and have tasted it before. i tried it last night but my cream and caramel topping never thickened and the biscuits also remained dry. Ileft it in the fridge overnight to set and this morning was still the same :(. did i do anything wrong

Hi Gugu, use fresh or long-life cream although sometimes the fresh cream cartons say “Dessert Cream” – very confusing I know but any resh cream should do! 🙂
For the south Africans living in Australia who don’t have access to orley whip I beat 600ml of thickened cream and one can or caramel treat, add a few drops of peppermint essence and stir in the broken bits of peppermint crisp. Layer tennis biscuits or arnotts nice biscuits and the caramel mix starting with the biscuits and finishing with the cream mix. Sprinkle crushed peppermint crisp on the top and refridgerate overnight to set. THis is traditionally made by my family at Christmas in addition to trifle but I make it through the year as a treat. It is very rich. Enjoy
