The other day I roasted a Pork Butt which is essentially a “small” gammon. There was still so much leftover though and it kills me to waste food so I chopped up the leftover gammon and incorporated it into this yummy, creamy pasta dish! So, essentially we had one Pork Butt creating 2 meals!
You can easily add some veggies to this pasta – my suggestion is to mix in a handful of baby spinach leaves just before serving. Alternately, you could add in 1/2 cup cooked peas or corn.

- leftover gammon
- maple syrup
- butter
- garlic cloves, crushed
- thyme
- lemon juice
- cream
- parmesan
- salt and freshly cracked black pepper
- pasta
How to Make Creamy Gammon Pasta with Leftovers { Summary}
Firstly, cook the pasta and set aside.
Gather all the meaty leftovers from the roast gammon, pork butt or gammon steaks. Chop it up into little cubes – even if you have just one cup of leftover meat, that is still perfect. If you have 2 cups, also great! If you have 3-4 cups of leftover meat, you may need to double the other ingredients too.
Fry the gammon in butter and maple syrup as well as garlic and thyme. Get the gammon all golden and crispy and juicy and the herbs and garlic fragrant.
Add the lemon juice and then the cream. Give it a stir and then add the parmesan.
Add the pasta to the sauce and mix to get everything nicely coated in the creamy sauce. Top with chopped fresh parsley.

Ingredients
- 1 –2 cups (150-300g) leftover gammon, cut into small cubes or shredded
- 1 tablespoon maple syrup
- 1 tablespoons butter
- 4 garlic cloves, crushed
- 1 teaspoon Thyme
- 1 tablespoon lemon juice
- 1 1/2 cup (375ml) cream
- ½ cup parmesan
- Salt and freshly cracked black pepper, to taste
- 250g uncooked pasta, penne or screws or farfalle work well
Instructions
- Cook the pasta according to package instructions, then drain and set aside.
- In a medium-sized pot, add the butter, gammon, maple syrup, garlic and thyme. Sauté over medium-high heat until the gammon is golden brown and crispy and the garlic is fragrant, 4-5 minutes.
- Add the tablespoon lemon juice and simmer for 1 minute.
- Add the cream and simmer for another 1-2 minutes.
- Stir in the parmesan and season to taste.
- Add the pasta to the sauce and stir to combine. Top with chopped fresh parsley.
