This One Pot Creamy Pasta and Mince is the ultimate easy weeknight meal, crafted from simple pantry staples you likely already have on hand. It’s tasty, it’s creamy but the best part however is that it all comes together effortlessly in one single pot and in 30-minutes! Hooray!

Everyone loves a mince and pasta dish and this dish is no exception! It is on our regular weeknight meal rotation! It’s just a comforting meal, the exact thing you want to sit down to eat after a busy afternoon shuttling kids from here to there!
I don’t usually add cream to my mince dishes but THIS recipe calls for cream and it elevates the flavour and texture in a dreamy kind of way! The chili flakes also give this dish a little pizzaz, as in, they add flavor, not burn! Creamy, tasty, cooked in one pot and on the table in 30 minutes, what more could you ask for? How to Make One Pot Creamy pasta and Mince (with pantry staples)
- Cook Onions and Garlic: Heat olive oil in a large pot over medium-high heat. Sauté the onions until soft, then add the garlic and cook for another minute.
- Cook the Mince: Add the mince and cook until browned, breaking it up as it cooks. Stir in the Italian herbs, chilli flakes, and tomato paste, cooking for another minute.
- Develop the Sauce: Pour in the chopped tomatoes, chicken stock, salt, pepper, and pasta. Stir well and bring to a simmer.
- Develop the Flavour: Let it cook for about 15 minutes, stirring occasionally, until the pasta is al dente.
- Final Touches: Stir in the cream and simmer for another 1-2 minutes. Serve topped with grated Parmesan.

What to Serve this pasta with?
My go-to is generally a side salad with a pasta dish BUT if you feel like a warm side dish, then I would go with some steamed green beans or roasted baby marrows. Roasted butternut or pumpkin would also be nice but just bear in mind that that will take longer than the pasta dish to cook.

Ingredients
- 3 tablespoons olive oil
- 3 garlic cloves, crushed
- 2 onions, chopped
- 750g beef mince
- 1 tablespoon Italian Herbs (See Notes)
- ½ teaspoon chilli flakes (optional)
- 3 tablespoons tomato paste
- 400g crushed tomatoes (or passata)*
- 6 cups beef stock or broth
- 2 teaspoon salt
- 1 teaspoon black pepper
- 500g Fusilli pasta or Farfalle or any other short pasta
- 1 cup cream (250ml)
For Serving:
- Parmesan Cheese, finely grated
Instructions
- In a large, heavy-bottomed pot, over medium-high heat, fry the onion in the olive oil until soft and translucent. Then add the garlic cloves and cook for another 1-2 minutes.
- Add the mince and cook until there are no raw bits. Make sure to break up the mince as you stir to make sure all parts get cooked. Add the Italian Herbs and Chilli Flakes and cook for a minute, then add the tomato paste and cook for another minute to develop the tomato flavour.
- Add in the chopped tomatoes, chicken stock, salt, pepper and pasta. Stir to combine.
- Heat the liquid to a simmer then cook for 15 minutes stirring every now and then, until pasta is al dente (cooked but still maintaining firmness).
- Stir in the cream and allow to simmer for 1-2 minutes.
- Serve with a sprinkle of Parmesan.
Notes
Italian Herbs – You can purchase a mix of Italian Herbs or alternately use a mix of any of the following herbs: Marjoram, Rosemary, Basil, Oregano, Thyme, Parsley. I used a teaspoon each of Oregano, Thyme and Parsley to make up 1 tablespoon.
If you do not have crushed tomatoes or passata then use 2 cups finely chopped tomatoes.
