Every cook needs a roast butternut recipe that earns its place on the table, and this is mine! It’s the one I turn to for an ordinary Tuesday supper, a special occasion and everything in between. The secret is a little mix of seasonings that makes the sweet, golden butternut ridiculously moreish. And because we roast it at a high heat, you get those lovely caramelised edges and soft centres in just 30 minutes.

It’s also a brilliant side for a weekend braai. Pop a generous dish on the table and watch everyone go back for “just one more piece”. Trust me, the aunties and uncles are going to want this recipe.
I love the fact that it cooks in just 30 minutes. The seasonings completely transform it and the olive oil makes sure it doesn’t dry out.
How to Make Easy Roast Butternut
Peel and chop the butternut into evenly sized pieces, then toss with oil and the seasoning mix. Spread out on a baking tray and roast at a high heat for about 30 minutes, until tender and golden with lovely caramelised edges. I don’t even turn the butternut half-way, but you could definitely do that if you felt energetic!
