Let’s be honest, cauliflower isn’t that vegetable you fight over for the last spoonful. Nah. Shame, poor old cauliflower. It’s packed with nutrients, though, so it does have something going for it. It’s workable.
Actually, it’s more than workable. It’s SENSATIONAL once it’s had a little makeover in the oven. All you have to do—and this is what this recipe is all about—is roast it with butter, Parmesan, salt and pepper, then finish with a little squeeze of lemon juice. Suddenly, you guys, cauliflower’s got swag!
The edges turn golden and crisp, the cheese adds a lovely savoury flavour, and you find yourself picking little pieces straight off the tray. You know, just to check they’re done. Guests will ask you for this recipe or they will casually ask what you did to the Cauliflower to make it taste and look this good!
Roast Cauliflower Goes Well With:
It’s lovely alongside roast chicken, roast gammon, steak or pork, and it works beautifully on a special occasion menu. One orange veg, one green veg and this smokin’ hot, golden-edged number alongside them. Look at cauliflower, finally getting invited to the party!
Top Tip for Making Roast Parmesan Cauliflower
Cut the cauliflower into similar-sized florets and spread them out in a single layer, with a little room between them. We want those delicious golden edges, so don’t pile everything into a small dish where it will steam. If you’re doubling the recipe, use two trays.
Once it’s roasted, a little lemon juice adds a lovely fresh finish to the buttery, cheesy cauliflower. It’s optional, but do try it! Serve straight away while the edges are still crisp—and perhaps claim your portion before putting the dish on the table.
