These Mini Crumpets are soft, fluffy and made from the simplest batter that comes together in just a few minutes. Cooked until golden and dotted with those classic crumpet holes, they’re perfect for slathering with butter, jam, honey or syrup.

These crumpets pair perfectly well with strawberries and crispy bacon! The batch makes around 35-40 mini crumpets and one batch will happily feed 6 hungry teenagers. In fact I made a breakfast for 6 hungry teen boys a week or so ago and they inhaled this batch of mini crumpets along with 1kg of crispy bacon and a punnet of strawberries. It was a real hit, especially when drizzled with syrup!
The batter is straight-forward. Mix your dry ingredients together, then mix your wet ingredients together and then add the wet to the dry and mix until smooth and combined. Bam!
The batter can even be made the night before and left in the fridge – which is great if you are serving a bunch of kids or family and need to get other food on the go in the morning as well.

Description
These Mini Crumpets are wonderfully light, fluffy and easy to make. The simple batter comes together in minutes using a handful of basic pantry ingredients and they cook up quickly into golden little crumpets with those signature holes that are perfect for soaking up butter, syrup or jam.
Ingredients
- 2 cups flour
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2 eggs
- 1 cup yoghurt
- 1 cup milk
- ¼ cup sugar
- 3 tbsp vegetable oil
- 1 tsp vanilla essence
Plus:
- Butter for frying
- Syrup for serving
Instructions
- In a large bowl, whisk together the flour, baking powder, baking soda and salt.
- In a separate bowl or jug, whisk the eggs, yoghurt, milk, sugar, vegetable oil and vanilla essence until smooth.
- Pour the wet ingredients into the dry ingredients and whisk until smooth and combined. The batter should be slightly thick.
- Heat a non-stick frying pan over medium heat and lightly grease with a little butter.
- Drop tablespoonfuls of batter into the pan to form mini crumpets. Cook for 1 minute or so per side, until bubbles appear on the surface and then flip and cook the other side until golden.
- Repeat with the remaining batter, adding more butter to the pan as needed.
- Serve warm with butter and syrup. Keep crumpets warm in the oven at a low temp, around 90°C is good!
Notes
These mini crumpets can be kept warm in a low-temp oven while you cook the remaining crumpets in the batch.
