Bran Muffins

A delicious source of fiber, bran muffins are both healthy and tasty. Follow this easy recipe and make the perfect breakfast snack – adding raisins, nuts, honey, orange peel or ground cinnamon for extra flavour.

Bran Muffins
Author: Just Easy Recipes
Prep time: 10 mins
Cook time: 12 mins
Total time: 22 mins
Serves: 12 Muffins
Ingredients
  • 2 cups digestive bran
  • 2 ½ cups flour
  • 2 tsp bicarbonate of soda
  • ½ tsp salt
  • 2 eggs
  • 2 cups brown sugar
  • ½ cup oil
  • 2 cups milk
  • 1 tsp vanilla essence
  • 1 cup raisins
Instructions
  1. Beat eggs, then add the sugar and beat until creamy.
  2. Now add oil and continue beating.
  3. Add milk and vanilla essence.
  4. Beat.
  5. Now fold in the dry ingredients (bran, flour, bicarb and salt).
  6. Add raisins and mix throughout the mixture.
  7. Place into a greased muffin tray and bake for 12 minutes at 180°C.

    Tried it 1 hr afta findg ur recipe – it’s easy & wonderful! Moist n soft! I added cinnamon, almonds, pecans & raisins. Family will wake to a lovely surprise tomorrow morn!! Tx again for the recipe!

    A great recipe! I used whole wheat flour and added blueberries, and these were perfectly moist and tasty. FYI – I tried to join your food blog directory (my site is cookingdangerously.com) but my e-mails kept being rejected.
