Spiced Pumpkin and Goat’s Cheese Salad With Sunflower Seeds and Citrus Dressing

Following on from my post on Banting and the Parmesan Chicken Recipe, here is another Banting recipe from Tim Noakes’ Book The Real Meal Revolution – Spiced Pumpkin and Goats Cheese Salad. I must say that Goat’s Cheese isn’t my favourite so I substituted mine with feta and it was delish! Next time I’m going to try blue cheese…can you just imagine that combination?! You could even try Chevin, Pecorino or Parmesan.

Spiced Pumpkin and Goat’s Cheese, Sunflower Seeds and Citrus Dressing

Description

A delicious, healthy, Banting-friendly salad with complimentary dressing.


Ingredients

For the salad dressing:

  • Juice of 2 lemons (50ml)
  • 1 tbsp Dijon Mustard
  • 150ml extra-virgin olive oil
  • Salt and pepper

For the salad:


600g pumpkin cubes
olive oil for roasting
1 tbsp ground cumin
1 tbsp ground coriander
1 tsp ground nutmeg
salt and pepper
200g chevin, broken into small chunks
1/4 cup sunflower seeds
100g rocket, washed


Instructions

For the dressing:

  1. Combine the lemon juice and mustard in a mixing bowl. While whisking continuously, pour in the olive oil until a dressing is formed. Season to taste.

For the salad:

  1. Preheat the oven to 180°C
  2. Toss the pumpkin in oil, cumin, coriander, nutmeg, salt and pepper and place on a tray in the oven until roasted and nicely coloured on the edges (about 45 minutes). Set aside to cool.
  3. Lay the rocket on a platter and top with the pumpkin. Layer chunks of chevin, sunflower seeds and, finally, a liberal splash of dressing.
