Tomato and Parmesan Soup

My kids can be fussy little shits sometimes. Yours? Flip. Yoh! They liked tomato soup….from Woolworths. But that “healthy homemade” Woolies soup had waaaaaaay too much sugar for my liking. We are really trying to eat more whole foods and less sugar these days and I thought I could surely replicate their favourite soup but decrease the sugar content.

Well, about 6 soup recipe attempts later….I have this one. Can you hear the angels singing in harmony? *oh maybe that is just me*


When William, my middle child, tried one of the FAIL recipes, he pulled his nose up at me (so innocently) and said “Mom?…its got a kind of…. stink”. My husband ate each bowl of soup I put in front of him – so sweet. But guys, they were really yummy soups but I guess not quite up there with the Woolies recipe.

This tomato soup is so simple and easy – the easiest one I created, by far, and the one they liked the most. HOOOORAH!

Literally 4 tins of peeled tomatoes (2 tins Italian cherry tomatoes and 2 tins whole peeled Italian tomatoes), 2 tubs of parmesan cheese (60g tubs), 1 cup of water, 1/2 cup cream, 1 tablespoon sugar, salt to taste and voila!!! How basic is that ingredient list? No nasty preservatives and words you can’t pronounce.

And you guys, last night Jem and I watched a documentary on Netflix called Cowspiracy. Watch it. So good and interesting.

Jem and I have been eating vegetarian 2 days a week but after watching that documentary, we are going to increase our vegetarian days and try to eat less meat (and dairy). Raising livestock is the number one thing killing our planet. Yup. Cowspiracy people, a must-watch. The reason I mention this, is because this soup *big hand pointing to picture above* is a winner winner for a fuss-free vegetarian dinner.

Healthy Tomato and Parmesan Soup

Description

This is the go-to recipe for my family – it’s kid approved, oh-so-tasty, healthy and delicious. And no excess sugar and nasty additives with long names!


Ingredients

  • 2 tins peeled cherry tomatoes
  • 2 tins peeled whole tomatoes
  • 1 cup water
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 120g grated Parmesan Cheese (or similar)
  • 125ml cream

Instructions

  1. Place the 4 tins of tomatoes, water, sugar and salt in a large pot and allow to simmer for 25 minutes.
  2. Using a stick blender, blend the ingredients until a smooth liquid forms
  3. Add the parmesan and blend again.
  4. Stir in the cream.
  5. Top with a little Parmesan when serving.
