This is a chicken stir-fry that I regularly want to eat right out of the pan. I have to make a real conscious effort to not eat this whilst I am cooking it and immediately after I have finished cooking it. My husband also likes to swing past and take a few cheeky spoonfuls before it is actual dinner time! This is a wonderful problem to have I guess because it means it is a really, really good chicken-stir-fry that everyone can’t wait to eat! Needless to say, it has established itself as a regular feature on our dinner time rotations.
What is so amazing about this Ginger Chicken Stir-Fry?
It’s healthy, light and full of flavour! Chicken is fried with black pepper and Thai red curry paste, garlic and ginger before being combined with an array of veggies! Then a sauce of honey and soy sauce is mixed into the stir-fry making this stir-fry super juicy too! And let’s not forget the cashews which had a gentle crunch and a dash of sweetness. Yum!

- Chicken Breasts

- Thai Red Curry Paste
- Fresh Garlic and Ginger
- Veggies; Bell peppers, spring onions (scallions), cabbage and carrots

My Top Tips for Making Ginger Chicken Stir-Fry:
- Don’t be shy with the freshly cracked black pepper – season the chicken liberally!
- Be careful not to overcook the chicken – chicken strips really don’t take that long to cook. See recipe for suggested times.
- Allow veggies to cook and soften completely before adding the sauce ingredients.
- Use fresh coriander to garnish – this not only looks pretty but tastes delicious too!

Ingredients
- 3 tablespoons olive oil
- 3 tablespoons butter
- 4 chicken breasts, sliced into strips
- Freshly cracked black pepper
- 1 tablespoon Thai red curry paste
- 3 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 2 bell peppers, sliced
- 4 spring onions (scallions), chopped
- 3 cups chopped cabbage
- 2 carrots, julienned
- 1 cup cashews (or peanuts)
- 1 tablespoon honey (or maple syrup)
- 2/3 cup soy sauce
- 1/3 cup water
- ½ cup fresh coriander
Instructions
- In a large frying pan, heat the oil and butter over medium heat and then add the chicken. Grind a liberal amount of freshly cracked black pepper over the chicken. Cook until the chicken has browned (2-3 minutes) and then add the Thai red curry paste, garlic and ginger and cook for 1-2 minutes until fragrant. Remove chicken from the pan and set aside.
- In the same pan, add in the peppers, spring onions, cabbage, carrots and cashews and cook for 4-5 minutes until the veggies are tender.
- Pour over the honey, soy sauce and water and stir to combine. Cook for another 3-4 minutes until the sauce has reduced slightly. Add the chicken back to the pan and toss to coat in the sauce.
- Serve the stir-fry over a bed of rice and garnish with fresh coriander
