Here you go, 17 easy soup recipes to inspire you on cold or rainy days. Soups, as you may know, is my all-time favourite kind of food and hence the reason I have so many soup recipes on this website. Enjoy them as simple yet wholesome family dinners, especially when you feel like everyone needs a good dose of veggies!
1. Easy Lentil Soup
This delicious Lentil soup is one of the soups I make on a regular basis. The reason being, it comes together quickly with mainly pantry ingredients. It is healthy and full of tomatoey-flavour and 100% vegetarian. It is just so good – definitely start here if you feel like you need a dose of Vitamin C!
2. Cream of Chicken Soup
A dinner with basic pantry ingredients, this cream of chicken soup recipe really is soup for the soul! My kids love the simplicity of it and I love the fact that it comes together in 20 minutes.
The real secret of this recipe though, is to use a homemade chicken stock or a high quality chicken stock. That really takes the soup to taste level 100. You will see the ingredient list is basic but you can always add extra seasoning or even parmesan cheese if you like. Be sure to dunk in some of your favourite sourdough bread or ciabatta loaf. Enjoy!
3. Tom Kha Gai Soup
Say hello to the fresh and zesty Tom Kha Gai Soup! Tom Kha Gai soup is an absolute treat! It’s healthy and versatile enough to be turned into a vegetarian dish if needed and the wonderful thing about this soup, is that is is a meal in itself – it has noodles, chicken as well as vegetables! You can flex your biceps to that.
4. Tom’s Famous Soup
In my house, we call this soup “Tom’s Famous Soup” – the tastiest vegetable soup. It’s famous because, Thomas, our 10-year old son, created this recipe from scratch one afternoon and we all loved it so much that he made it again, and again and…. Any moms dream, right?!
And the name just developed, like, can you please make your “Famous Soup, Tom?” Or sometimes he would even ask, “Mom, could you make my Famous soup?”
5. Creamy Potato and Celery Soup
This creamy potato and celery soup recipe was one of those where I just added some veggies to a baking tray and hoped for the best. The resulting soup was SO tasty I rushed to scribble down the recipe so I could make it again the following week. And since then, it’s been tried and tested many times. Many times.
6. Roasted Butternut and Red Pepper Soup
This Butternut and Red Pepper soup is the perfect vegan appetiser as I have not used any cream or milk in the recipe. And those who don’t love the idea of coconut milk, it doesn’t have that either! It is just a pure cup of good nutrition! The recipe will serve 8 people in 8 dinky little enamel cups.
7. 5-Ingredient Butternut Soup
Probably the easiest soup you’ll ever make. In fact, no, it IS the easiest soup you will ever make. There are not frills to this 5-ingredient butternut soup but the taste is amazing! I always maintain that adding more ingredients to a dish doesn’t always make it taste better. Less ingredients means you get to taste the ingredients that ARE there!
8. Red Lentil and Lemon Soup
have never used raw lentils in a soup, until I tried this soup. For some reason I thought they took FOREVER to cook. Turns out, they only take 20 minutes, if that. So, it’s a good enough reason to keep that wholesome looking jar of red lentils in my pantry and a VERY good reason to make this Red Lentil and Lemon Soup. It is a heartwarming, soul-soothing soup with sweet, salty and sour flavour combinations that make each mouthful completely moreish on a cold winters day! And, let’s be honest here, soup is always a good excuse to lather butter on a chunky piece of fresh bread to DUNK! Right?
I knew you would agree.
9. Easy Leek and Potato Soup
There are many reasons to love this tasty Leek & Potato soup! Firstly, look at the method, there are 7 ridiculously easy steps. When I look at recipes, I always do a quick glance of the method and it can be an instant turn-on or turn-off for me. Methods shouldn’t be essays, yes?? YES! Secondly, it is the easiest go-to recipe for dentist-days – root canal, fillings and braces-tightening. Not a great thought I know but its just a practical mention
Thirdly, it works well for sore or upset tummies or if you’re feeling a little under the weather. Fourthly (is that a word?), it goes without saying it is PERFECT for rainy / winter days when you want a warm meal. Fifthly (hah hah try say that) the ingredients are available most of the year and if you can’t find leeks, use spring onions.
10. Roasted Carrot and Ginger Soup
I first made this Carrot and Ginger Soup recipe a few years ago when I wanted to do a “cleanse week” – a boost of really good healthy foods. I made it for my colleagues and when we sat down to eat it, it was just like this tacit understanding that we should just keep quiet and enjoy the soup. Have you ever had that? When the food is so SO tasty, the conversation needs to pause for at least 30-60 seconds. It’s called an ode to the food.
11. Tomato and Parmesan Soup
My kids can be fussy little monsters sometimes. Yours? Flip. Yoh! They liked tomato soup….from Woolworths. But that “healthy homemade” Woolies soup had waaaaaaay too much sugar for my liking. We are really trying to eat more whole foods and less sugar these days and I thought I could surely replicate their favourite soup but decrease the sugar content.
Well, about 6 soup recipe attempts later….I have this Tomato and Parmesan Soup Recipe. Can you hear the angels singing in harmony? *oh maybe that is just me*
12. 20-Minute Leek and Potato Soup
This soup makes you feel happy that soup as a food -category exists on planet earth. This Leek and Potato Soup recipe only takes 20 minutes to make! Let’s clink our soup cups to that. The fact that it is topped with bacon bits and crispy croutons, does add to the appeal. If it is raining outside, then this soup is a real winner for dinner!
13. Tasty Lasagne Soup
For cold winter’s nights, soups are just the best!!! I originally saw this Lasagne Soup recipe on Pinterest and being a soup lover, I took one look at the photo and thought I GOTTA make that! It has a rich tomato flavour, pasta noodles and of course the sublime cheese and meaty flavour. I simplified the recipe a little and most of the ingredients are basic stock items. Yippee for basic pantry ingredients!
14. Chicken and Corn Soup
This Chicken and Corn soup really is the BEST chicken soup recipe I have ever tasted. And it’s quick and easy too, like most recipes on this website. I always feel like I need to reinforce that point though, because, well, it really is easy and I know a lot of people can be scared off by long, complicated recipes.
15. Roasted Tomato and Basil Soup
This is a rich tomato and basil soup, it’s absolutely delicious…even my kids love this soup! Perfect for a starter, main course or even as a base for a pasta sauce! Use plum or vine-ripened tomatoes, in fact whatever tomato you use, just make sure it’s red, ripe and juicy.
16. Creamy Broccoli Soup
This is one of my absolute favourite soup recipes and can be whipped up in 30 minutes flat. The recipe makes use of spinach leaves in addition to broccoli as well as a hint of lemon which all combine extremely well together
17. Lentil, Feta and Red Pepper Soup
Perfect as a lunch time snack or light dinner, this wholesome, lentil, feta and red-pepper soup is quick and easy to prepare. The recipe makes use of Truss tomatoes which are vine-ripened and are often sold with the vine still intact. They are bright red and full of flavour. If you can’t find them at the supermarket you can just use tinned tomatoes instead.
